Gluten Free ‘Turtles’ Cookies

My Original Gluten Free Coconut Flour "Turtles" Cookies Recipe

Mix together the following ingredients to create base Coconut flour cookie dough:

1/3 cup coconut flour
1/4 cup butter, melted
1/4 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 whole eggs


And then add the following:

½ cup roughly chopped pecans
½ cup milk chocolate chips
6 or 7 butter toffees (preferably soft), finely chopped

Mix the ingredients well, making sure there are no flour lumps in the mixture. 
Scoop small flattened rounds onto greased cookie sheet.
Bake at 350F for 12-15 minutes. 

Let cool for five minutes before serving.

Recipe makes approx. 24 cookies.
